I bought all the ingredients to bake a cake to celebrate, then my dishwasher broke down. I’m not going to wash all those dishes by hand.
So, let’s shout happy birthday with this fresh mango salsa recipe! It’s irresistibly sweet and spicy, super simple to make, and outrageously delicious. Plus, it’s so colorful that it almost looks like confetti up-close.
Come to think of it, salsa is actually the perfect anniversary recipe since my first recipe was for salsa. That post broke records for this blog back then. Three comments in one day!

Mango Salsa Ingredients
You’ll need only six basic ingredients to make this easy mango salsa: ripe mangos, red bell pepper, red onion, cilantro, jalapeño and lime.
Uses for Mango Salsa
This mango salsa would be fantastic on fish tacos or just about any fresh, Mexican-themed dish, really. I can confirm that it goes well with chips, guacamole and black bean tacos. It was a big hit at my friend’s potluck dinner!
You could also serve it on salad or just eat it straight out of the bowl as a salad. It’s that good.

Fresh Mango Salsa
This simple and colorful mango salsa is super easy to make! It’s sweet, spicy and absolutely delicious. Serve this fresh mango salsa with chips, on tacos or salads, or as a salad itself. It’s that good. Recipe yields about 3 cups salsa.
Ingredients
- 3 ripe mangos, diced (see photos)
- 1 medium red bell pepper, chopped
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro leaves, chopped
- 1 jalapeño, seeded and minced
- 1 large lime, juiced (about ¼ cup lime juice)
- ⅛ to ¼ teaspoon salt, to taste
Instructions
- In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.
- Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For best flavor, let the salsa rest for 10 minutes or longer.
Notes

Storage suggestions: Honestly, I’ll be amazed if you have any salsa leftovers! You can store the salsa in the refrigerator, covered, for several days. It will be best fresh, though.

I love so many of your recipes and always wanted to try mango salsa but can’t handle spicy food. Would it be okay to leave the jalapeno out? Or is there something less spicy I could use instead?

This recipe is a hit! I adapted it the second time I made it and added strawberries, jicama, and fire honey! It was AMAZING before, but it went to a whole other level. I served it with buñuelos chips, corn chips, and tajin.

This is my ‘go to’ salsa! Love the fresh, clean ingredients. We use it on fish, tacos, pork, steak and chicken!
You can switch out the mango with or add pineapple, papaya, any bright tropical fruit. I’ve even added blackberries to this salsa and YUM! (We aren’t cilantro fans so I either add less or just omit it)This is also great as a salad the next day.
Grilling some Grouper and dressing with this salsa for dinner tonight.

I grew up in Miami with Hayden mangoes all over the yard. This is hands down the best mango salsa I have ever made. I eliminated the jalapeño but is still delicious. I use it over grilled fish or just as a dip with tortilla chips. I’m going to try it with tostones next.

Made this recipe to accompany a grilled Jamaican Jerk Chicken recipe; perfect side for the chicken & would be great as a snack any other time of day! Never prepped mangoes before; now I know how to work around that Madeleine-cookie-sized pit! Prepped & tossed night before; salsa flavors were fresh & tasty the next day.

Have you tried this with a yellow onion? I really dislike red onions.
I prefer it as written, but you can try it with a different onion if you like.

Hi Kate, I love this Salsa recipe. Using mangos is such a great idea cuz it’s Mango sweet. I put it on a bbq bean burger and was so delicious. I only had lemons so I used one but I think it’s worth getting a lime for this Salsa. Thanks again for the delicious recipe.

Made it as you suggested, added a few strawberries I had lying around. Also added a little sesame oil and toasted sesame seeds the next day for a different taste.

Have dried cilantro will that work too? Also, only making for 2 people is there an easy way to cut it down?

I made this the other day and it was FANTASTIC! I don’t like spicy so one jalapeno was perfect to give it just a touch of heat. We put this on homemade tacos and it was great. Will be making it many more times in the future!! I did pulse it in a food processor for just a few seconds to makes the mango smaller, which fit better on the tacos! Matter of preference I guess!
