Apples
Apple Steel-Cut Oatmeal
Gluten free and vegan (see notes)
“We made the apple oatmeal on this cool morning here in Kansas…and it was perfect. Topped it with some almond butter and a swirl of maple syrup. My 3 year old ate most of my portion along with his. So, kid friendly, as well! Another recipe well done!” – Jamie
Beets
Simple Beet, Arugula and Feta Salad
Gluten free and easily vegan (skip the cheese)
“This is, quite literally, my new favorite salad! I have made it for several friends – who all have adored it – and have added it to my weekly food staples. I’ve never actually made it with pumpkin seed – I substitute pistachios instead, or omit the nuts altogether if I am not eating it right away, and the homemade balsamic is fantastic…YUMMMM!” – Franki
Broccoli
Parmesan Roasted Broccoli with Balsamic Drizzle

“I was just contemplating what to do with my Costco-sized bag of broccoli when this recipe arrived in my inbox. Thank you Kate! OMG this was phenomenal! I think even the veggie-averse would devour this dish and broccoli lovers rejoice!” – Lori
Cabbage

“Super easy to make and delicious, to boot! I forgot to pick up carrots so mine was cabbage only. Didn’t matter, my taste buds were beyond pleased.” – Sondra

Fennel
Autumn Kale Salad with Fennel and Honeycrisp
Gluten free
“Not sure why I waited so long to try this one – just exceptional. Made it for a supper club last night and it was such a hit. The fennel is such a perfect touch – cannot wait to use it more often. Luckily, I have enough ingredients to continue whipping this up throughout the week. Can kale salads please be your biggest chapter in the upcoming book? My absolute favourite!” – Emily
Hardy greens (arugula,
chard, collard greens & spinach)
Hearty Sweet Potato, Arugula & Wild Rice Salad with Ginger Dressing
Gluten free and easily vegan
“Wow – whoever said you can’t make friends with salad never tried this one. It’s sensational and thanks for the tip on toasting pumpkin seeds – never like them before and now they’re delicious! I halved the recipe and replaced half the oil with orange juice (watching fat intake) and looked forward to my 3 packed work lunches everyday. It was so good I’ve bought the book and recommended your blog to friends. (Colourful Beet this week) Thanks Kate!” – Heather
Kale
Quinoa Vegetable Soup with Kale
Gluten free and vegan
“I just found this recipe via pinterest! I made the soup yesterday and I absolutely love it!! Never thought of quinoa in soup but this makes so much sense! I am always looking for ways to add protein without adding meat so this is great and my whole family loves it! (I’m a college student by the way, not a mom, in case you couldn’t tell. lol) This soup is great for all ages!!” – Maya
Mushrooms
Portobello and Poblano Fajitas
Gluten-free
“These looked great so I made them for my meat eating family and they loved them!! I asked my hubby if he missed the meat and he actually said, “NO, these are delicious all by themselves”. Yay! I did like a bit more heat, so my hubby and I added some to our dishes. But the kids liked them just the way it was written.” – Belinda

Of all the recipe blogs I follow, yours is by far my favorite. I am so sorry to hear about poor cookie. You are such a great dog mom and take such great care. Thank you for everything that you do. Thinking of you
Thank you, Lisa! I appreciate it.
Hello Kate,
I love your blog and cookbook – which I use frequently and just peruse. Most recent was the carrot cake for my husband’s birthday – it is his (and my) favorite cake. Many thanks for all the great recipes. I love Cookie too and hope she keeps doing well. Our pups are such comfort.
Thank you, Jill! I appreciate it.
Sending belly rubs and behind the ear scratches for Cookie. And best wishes for you there is nothing like the love of a dog.
I love your recipes they always add more nutrition to my life.
Thank you, Misha! I appreciate it. :)
Sorry to hear about Cookie, but glad chemo regimen is working.
Thank you, Gitta!
So sorry to hear about your dear Cookie. As much as I love your recipes, I’m equally a fan of Cookie and her sweet happy face! I’m hoping for the best!
Thank you, Ingrid! I appreciate your kind words.
Huge fan of your blog and cookbook, and biggest fan of Cookie. Thank you for sharing about Cookie and so glad to hear she’s doing well with chemo! Sending her lots of love from my family
Thank you, May!
I’m sorry to hear that Cookie is sick, but glad to hear that the treatments are working!
I wanted to tell you that my husband (a Chiropractor who is into a more natural approach to things) had checked out all of the dog foods at a nearby feed store (about 5 or 6 years ago) to see which ones had/didn’t have heavy metals in them. Of the brands that this feed store had (which were many) Blue Diamond was THE ONLY one that didn’t show heavy metals! I immediately switched to that brand. (I see that Costco now carries Blue Diamond, btw!) I started MAKING her food for her & only gave her the B.D. food if I was in too big of a hurry to cook for her.
Some human foods, as you probably know, are not good for dogs, so I made sure to follow good recipes that were created specifically for dogs.
I Hope This Helps. <3
Thank you for your kind words and sharing your research! I appreciate it. I’ve always been very mindful of what she is eating and continue to do so. I’m happy you found something that works well for you!
So sorry to hear about Cookie’s illness. Best wishes with her treatment.
Thank you, Mark!
So so sorry to hear about Cookie! Hope for a swift and strong recovery!
Thank you, Brian! I appreciate it.
Wow, I’m so sorry to hear that Cookie is sick! You two are such an important part of my life, I feel like I know her. Sending you both love.
Thank you, Rachel!
I am so sorry to hear about Cookie’s illness. Our dogs are truly family members who bring much joy and happiness to our lives. I will be praying for a complete recovery for your precious Cookie.
Thank you, Amy!
Hi Kate, I am so sorry to hear about Cookie. Sending you best wishes as you navigate her treatment, and I hope she recovers. Dealing with the serious illness of a furry companion is so painful, and I wish you both all the best.
Thank you, Jordan.
So sorry to hear about Cookie being sick. She will get well soon, keep my fingers crossed!!
I also have a dog named Cookie, he is a 11 year old brown dachshund. I love your recipes, thanks for sharing. Love from Germany, Patricia & Cookie
You have some great recipes listed here. But I was a little disappointed with your cabbage recipes. They were mostly slaw, salads and tacos. One can do so much more with cabbage. For example Polish noodles and cabbage, cabbage soups, Cabbage kielbasa Stew. Also there are many recipes with fried cabbage which even alone is very tasty. Cabbage is one of my favorite vegetables.
I’m sorry to hear you weren’t satisfied with my recipes. Perfect Roasted Cabbage is also a great recipe!
I just want to congratulate you and your husband on the birth of the new addition to your family! Your commitments have not increased – they have tripled, and I respect the time you continue to give us, your loyal followers :-)
Thank you, Sharon!
Love your recipes. It seems all the recipes have balanced nutrition.
Cookie and Kate bring love, care, and creative energy into kitchen delights that are healthful, relatively easy to make and heartwarmingly delicious.

I ,Really, understand that you yanks are extremely parochial but I just wonder how a lovely, talented lady like You, doesn’t Reach out to the rest of our Beautiful Planet.
