27 Healthy Vegetarian Soup Recipes

It’s cold outside here in Kansas City, so I’m sharing my favorite soup recipes available on the blog. These soups and stews are warming, hearty and packed with veggies. All of the recipes are vegetarian, of course. Many are vegan as well, either as written or with slight modifications.
From creamy, yet cream-less tomato soup (perfect with a grilled cheese sandwich) to contest-winning vegetarian chili, you’ll find just what you’re craving below.

We love Tia food and the hotter, the better. To increase the spice we add jalapeño and red pepper flakes to this recipe but we stick true it. I’ve been a vegetarian my whole life and soup seems to still be one of those things that’s super difficult to for me to want to eat it again and again for days after I make it. I consider this one my first victory—Incredibly flavorful and hearty without all the fatty cream. I didn’t have almonds or tamari, so i topped mine with toasted pepitas and it was perfect. It also helped to have my immersion blender on hand.

21) Thai Curried Butternut Squash Soup

“I made this soup for lunch today during our blizzard on Cape Cod. It is amazingly delicious! The toasted coconut on top really makes it! I used an immersion blender and added the coconut milk to the soup in the pot afterwards. Not as pretty as yours but still delicious. Thanks for another great recipe, Kate. I love everything about this post! The chana masala looks delicious, as does the green soup. There is nothing better than a bowl of soup in the winter – although the process of making soup in the winter comes pretty close. Love, love love!

I amaze that one all te time during winter and my whole family loves it, even my suddenly picky 2 year old :) we also love love love the sweet potato kale soup, except I just cook a cup of brown rice and throw it in rather than using the Farro. I would love to see a healthyish dill pickle soup recipe. The recipe that I use is delicious but I feel guilty eating it. It contains a stick of butter, a cup of sour cream, potatoes, a cup of pickles and some pickle juice. Those ingredients don’t really add up to a healthy soup. :)

Yesss! A soup list! It’s supposed to snow all week so this couldn’t have come at a better time.
You should try to make a chilled raspberry (or cherry) soup recipie! There’s a art museum that serves a raspberry one in their cafe and its super good. I know they make theirs with raspberries, sour cream, yogurt, cinnamon and other stuff I can’t remember, maybe lemon juice? (if you are interested, I will ask again) I guess they base theirs off of an old Scandinavian recipie

Kate, the African Peanut Soup is one of my favorites. It’s the first time I ever made anything in that flavor family, and now I’m obsessed with African/Indian/Moroccan cooking! I have a tupperware container of this in my freezer for when I’m craving it =)

Hello! These recipes are exactly what I am looking for! I would just suggest fixing the mobile version of this website-it is terrible to navigate because the ad blocks half of the page and when i click out of it I’m brought to the lentil soup recipe every time. Made number 3 (curried sweet potato, farro and kale soup) for a big and varied crowd at my house tonight and it was a total hit. Love the sweetness and texture. Plus it was easy to prep ahead of time and cook when we got hungry. Very little time away from my friends, and a delicious meal!

I made your Quinoa Vegetable soup with Kale yesterday. It is AMAZING!! I was quite impressed with myself that I made a soup that was this frangrant and had so much flavor! Hi Wendy! It depends on the soup and dish. Sometimes brown rice and be a good substitute, couscous, or even farro. But again, it depends on the recipe.

I love your recipes cause they are so similar to Lebanese ones, but you add up then extra flavor of spices and herbs.

These all sound wonderful but some of them have really high sodium content! Over 1500 mg for some for one serving? That’s a lot of sodium so I wouldn’t consider them “healthy”. :-(
Hi Leslie, those nutrition facts were calculated with regular broth and beans, not low-sodium varieties, so you could easily reduce the sodium content by choosing those options. Nutritional needs, sodium threshold and concept of “healthy” can vary significantly on an individual level. The recipes are all made with healthy whole foods, and they more than qualify as healthy under my own definition!

OK, so I got your cookbook for Christmas and absolutely love it! I’ve been reading/making my way through the recipes ever since. The honey scones were a hit with relatives after an indulgent holiday. The breakfast fajitas and quinoa taco mix are delicious and the butternut squash chipotle chilli is so nice and warming for my bitter cold Canadian winter. Thanks so much, it’s been a nice treat for the new year!
