29 Delicious Vegan Dinner Recipes

Below, you’ll find wholesome vegan meals made with affordable and protein-rich whole grains, beans, and nuts. You’ll also see plenty of fresh, colorful produce, and occasionally some tofu. No funny meat substitutes here.
As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off a sprinkle of cheese or a fried egg. I’ve enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.
I love the challenge of making my favorite recipes vegan, like when I figured out how to make the lasagna and enchiladas in my cookbook without the cheese. Honestly, the cheese-free variations are just as tempting as the originals. In total, the book offers 96 tested vegan/vegan-option recipes.

I have looked through this list of recipes, and although there are some that sound quite good, none of the ones I looked at would work as a full meal for us. The one problem with all of them is that they do not contain enough protein to sustain us. I tried being vegan for a while and ended up being starved for protein. I have thought that maybe I didn’t understand how to structure my meals, but I’m seeing now that it is very difficult to be vegan when one needs a high protein diet. For us, vegetarian meals that can include eggs, yogurt and cheese work much better. I was really hoping to find something on your list that would work. :-(
I’m sorry you felt that way, Susan! I have vegetarian options that might work for you if that is what you are after.
what utter nonsense, starved of protein? you do realise some of the strongest animals (and people) in the world get more than enough protein through vegetables.I work out 5 days a week and never ‘needed’ cheese and milk to stop me from falling over from a protein deficiency….. Amazing Recipes Kate! will be using some of them soon :)

Hi Carla! Great question. The recipes in the cookbook are mostly just in the cookbook, although I have a few on the blog that are somewhat similar. The cookbook has it’s own unique set.

This has been an incredible hit with my family! My husband is a meat and potatoes man but absolutely loves it, and my 12 yo daughter asks for me to pack for her in her Thermos for lunch at school. I’ll even throw an egg on it and make it a breakfast or brunch over a bunch of tortilla chips!
